Default Substitute 2 row for pilsner?

So the LHBS doesn't sell pilsner malt. The guy said 2 row doesn't taste any different, but I'm making a saison, and I'm afraid to mess with the pilsner, since it's the biggest part of the grain bill. I don't care about color, but will the taste really come out the same?

Nope, it doesn't taste the same. Swapping 2 row for pilsner or maris otter I have no issue with, but going the other way just isn't the same.

That being said you can still brew it and give is a try. Just because it isn't the exact taste you're going for doesn't mean its not good...

just call it an 'american saison'... it won't come out exactly how you want it, but i'm sure it'll still be a good beer. i wouldn't sweat it too much if it's going to be a PITA to get the pilsner malt. it's surprising they don't sell it tho..
