Is it alright or is it not a good idea to top off our batch to the 6 gallon mark to boil down to a 5 gallon batch? Seems like our 75% mark was a bit high for our first try. Seems like ~70 is where we will end up.

Is a gallon too much to add for top off water, or should we be alright?
 
70% is just fine, especially for your first attempt! You can add water to boil down, just know that it will decrease the gravity b/c you will diluting the wort some. Just try another sparge to get some more pre-boil volume. At least that way, it will have some sugars in it
 
You could always add some DME or even sugar if you're dead set on hitting your numbers. Adding top-off water to bring 5 gallons post-boil up to 6 will dilute your wort by about 16%.
 
Can you recommend an amount or should we just stop it at the 6 gallon mark we have marked on our cpvc "meter"?
 
We sparged another 2 gallons until we hit our 6 gallon mark. We actually ended up at ~78% efficiency as we let it drain a while longer and ended up with 5.5 gallons. We're excited at how smooth everything went!
