So I have this beer that got an infection which I got under control with campden tablets. Well how do I get it to carb in the bottles now that I killed the yeast? Would adding a yeast that advertizes "high sulfite tolerance" work?
 
Yes, re-pitch, prime & fill.

What kind of infection? Most of the time the beer isn't drinkable.
 
It think it was a little bit of everything...mold mostly. Luckily it was an unhopped fruit beer so the sour/funk/cheesy tastes and smells didn't kill it.
