Whether one racks fermenting beer off the sediment one or more times, if the beer is ultimately bottled it sits on yeast for 1 to 6 months. In a standard 500 ml beer bottle, the yeast surface is around 5% of the bottle surface area. Is autolysis always a bad thing, or does it make the beer more interesting?
