I'm about to start my keggle build and looking to source parts locally. A couple of my local valve suppliers carry ball valves, but nothing listed as "sanitary" or "food grade". I'm just wondering if any of the following valves would suit my needs and if so, which ones would you recommend?

Any of those stainless valves will work fine on a keggle. Stainless, by definition, is food grade. As far as a recommendation, get the cheapest one! The three-piece are nice for taking apart to clean, however.
 
Looks like any of those valves will work just fine. No need to get all hung up on the food grade thing. If the valves are OK for potable water, they will be OK to use for brewing. Brass valves will also work just fine and they are a lot less expensive. I've been using an ordinary brass ball valve on my kettle for years with no problems at all.
