What advantage is there to using these controllers instead of the thermostat setting of the fridge?

The external thermostats allow you to set temps that are above the working range of a fridge.
Each fridge is probably different, but the one in my kitchen has a max setting of 49*F (low is 38*F). 49*F is much too cold for ales and a little too cool for initial lager fermentation.
