5.5 gallon batch

9 lb Marris Otter
1 lb honey malt
1 lb crystal 60
.25 lb chocolate malt

Mash at 156 for 60 min

.50 Nugget 11% 60 min
.50 Nugget 11% 15 min
1 ounce Nugget min flame out

Nottingham yeast

Thoughts ? I also have 2oz of Willemet 5% as an option.
 
I ve heard mixed reviews about the honey malt...I'd use a little and work your way up....that's all I got
 
I've used the same amount of honey malt in a number of pale ales with no major issues. Perhaps I pull it back a little for this one ?
 
well if its working why change it...just I've heard some horror stories with it....I just made a mostly marris otter beer and it tastes to me like clover honey...I over did it with the amber malt a little I think but its like hoppy honey.
