Howdy,

I thought I would take a stab at designing my own Octoberfest recipie...please critique. This is for a six gallon batch.

8 lbs Light LME
.5 # caramunich
.5 # german pilsner malt
1 # American 2 row malt Steeped at 160 degrees for 1 hour
1 oz Saaz at 60
1 oz hallertauer at 40
.5 oz tettnanger at 5

Whitelabs 833 with a starter

Am I close? Way off base? In the words of Scooby Do...Rellp
 
Your color is gonna be rather light for an oktoberfest. The pilsner malt and the 2-row need to be mashed to work properly, but that is basically what you are doing in the steep. Those grains aren't traditionally grains that you would steep. Your base of 8lbs LME is fine but you might want to explore some chocolate malt, crystal malt, and some other things to get the rich color of the Oktoberfest rolling...
