Hi all. My name is Summer. I'm starting my first Kombucha brew tomorrow and need help. I wanted to use the Weston price foundation recipe but in using a two gallon so ill probably Justus's nourished kitchen recipe for continuous brew. Any tea leaf suggestions? Can I keep the kid on jar if it has ahold in the lid? Also, my mother has been refrigerated for 4 days is that okay?
 
I like two parts black-orange pekoe with one part green jasmine. I also like equal amounts assam plus honeybush. I do not make kombucha in a closed container. And a mother in refrig for four days should be fine.
