I'm a little rusty. Last night I pitched my Munton's gold yeast into a 1.073 gravity ale wort. I cranked the AC in the little storage room I'm using and it got down to about 58F. Is that too cold? I seem to remember "the colder the better" to some extent. What is the ideal temp for an ale? I don't want to take any chances of incomplete fermentation, could this conceivably happen if it's too cold?

What kind of beer is it? The mid to low 50's are for lagers. If it is an ale, 65 is about right. Fermentation produces heat, so adjust by about two degrees for that.

That's an expensive way to keep the temperature down.

I suspect 58 F is too low. I did a quick look and there is no advertized temperature for muntons. I would recommend increasing the temperature to the mid 60s.
