I know this story has been posted many times here, but let me post it again...

The dubbel I brewed this spring was somewhat underwhelming (a little lighter colored and a lot lighter flavored than I had hoped.)

This was a beer for cellaring, so I did not expect it to be spectacular after a month. But still, I didn't taste a lot of potential in it, so I wasn't all that optimistic about how much it would improve.

On a lark, I cracked one last night, for the first time in about 6 weeks. It is maturing beautifully. I'm now pretty excited to taste it again this fall.

So, for the billionth time, if a beer is underwhelming...wait. Not all beers improve with age at celler temps, but many do.
