I found this on a craft brewery site in Ontario (Canada) thought it was an interesting read, some of it differs from what I have read elsewhere and obviously some of this is specific to a brewery and not a home brewer.

Any idea about what a 'government cellar' is?

§ 25.24 Storage of beer.

(a) Taxpaid beer. Beer of a brewer's own production on which the tax has been paid or determined may not be stored in the brewery, except as provided in §25.25 or §25.213. Beer produced by other brewers may be stored at the brewery under the following conditions:

(1) Taxpaid beer will be segregated in such a manner as to preclude mixing with nontaxpaid beer;

Great clarification on that! It's crazy how the government thinks it "magically" changes once taxes are paid on it... :drunk:
