Lemoncello is always great. There are a few threads out there already. After you make a successful batch, replace the lemon zest with anything; fruit, herbs, spices, whatever, and keep the sugar/vodka part of the recipe.
Or alter the lemoncello into something like lemon lavender cello, lemon strawberry cello, etc.
