So I did a Simcoe/Citra IPA just to experiment (first time with both hops). I pulled a gravity sample today and WOW! If I hadn't made the beer myself, I wouldn't believe there wasn't fresh mango in there! I'm not sure yet if its a good thing or a bad thing, I'll have to see how it mellows as it ferments and conditions.

Hopping schedule was...
1.25 oz Simcoe @ 60

1 oz Citra @ 20
.25 oz Simcoe @ 20

1 oz Citra @ 7

1 oz Citra @ 0

1 oz Citra @ DH 5 days
.5 oz Simcoe @ DH 5 days

I have added Citra in 2 different recipes.Finishing up a keg right now. yes, it will need to age a bit, seems like it mellows more with age. It will have a bit of an odd flavor until it ages.

The tropical fruit flavor of citra will settle down fairly quick in my experience. Unlike something like Pliny where you should drink it right away, this will benefit with a couple weeks of age.
