I just racked my AHS Dbl Choc Stout to the secondary for "bulk aging". It was in the primary for 11 days. I used a 1 1/2 liter starter. All went well. Sample tasted good. No chocolate flavor, though. It looked like all the cocoa powder was at the bottom of the bucket with the yeast. Looked like pudding. I added the cocoa to the last 10 minutes of the boil. It wasn't a layer on top of the yeast. It was all through the yeast like pudding.
Oh well. It will still be a good stout!
