Im a noob -- can you take an ale with ale yeast that is 4-5 days from yeast pitch with not much action seen anymore ( yet no SG measurements ) and crash it down like lagering in a fridge for 1-2 weeks prior to final racking or kegging?? what will that do to the process/yeast etc?? thanks doc
 
Ale yeast are only active at room temperature so they would stop fermenting. You can however ferment lager yeast at room temperature to make steam beer.
 
I would not. The yeast consume or "scrub" a lot of the byproducts and other crap in the beer even after primary fermentation appears to be finished. Cold-crash now and you might end up with off-flavors from it. I usually wait at LEAST a week before chilling, with 3 weeks optimal for an average-SG ale. You can get away with less with a low-gravity light ale, such as a blond. But above all, take gravity readings, make sure it's actually done.
