Hello everyone,

I am sending my beer into my first comp next month. I have a question for you all. I keg, I will be filling bottles off the keg. How long is too old to send a beer? I know it's going to depend on the style of beer. I am going to be sending in a Kolsch and possibly an APA. The APA is in the fermenter but the Kolsch is just over a month old. I don't want my score to be lower due to my beer not being fresh enough.

That being said, how quickly do you guys send your beers to comp after they're done?
 
I prefer that the beer be fresh off the tit of the frementer....YMMV. Try to get it down to seconds if possible.....
 
Make sure to give the hops a light blowie before dry hopping....it gets a good release right before hitting the fermented jiggle juice.
