Ive made a wheat with orange and coriander and the bitterness from the orange peel is perfect. Does it act the same way as hops and dissipate over time? Or will it stay bitter for long?

You're just not controversial enough. :D
I don't keep beer around for long so I can't really say, except that my first from a batch is never the same as the last from the same batch. I'm drinking a Hoegaarden-like beer right now. If your beer is perfect for you right now I say drink up - because it will change on you.

Wheat beer is typical drinked young. With that being said giving it sometime will only make it better. I did the same brew and gave it to my FNL, and he loved the citrus at the last bottle.
