I found some un-milled grain left over from last year in a sealed bag stored in box in my basement. Is it trash?

I would probably still use it. Maybe grab a pinch of it and chew it. If it tastes fine then go for it.

If it was stored properly, there is a good chance the enzymes are stil active (I've tested this). +1 on tasting it. While it might still convert, that doesn't say anything about what has happened to the flavor compounds. These can become oxidized too. If it tastes good, use it. If it tastes rancid don't.
