I came across some ingredients I never ended up using and was wondering if they ever expire or if it will affect the taste and/or body and the specific gravity of the beer if I use them now. I found 6 lbs of DME, and assorted specialty malts (black patent, chocolate, and various other...) that I purchased 4-6 months ago, all of which have been stored in their original, air tight packaging in the fridge. Any help on this topic would be great! Thanks

You'll be fine. The grains are the most sensitive, but uncracked & cold they are good for a year or more. Once you crack the grain, either freeze it or use it within a month.
