Can anyone tell me if there are any particular yeasts out there that do better in higher temps (72-75F)? I live in Alabama, and even with the AC going full blast, my storage area has a hard time staying below 74 or 73.
I have a 7wk old son, so cranking the AC down further isn't in the cards right now. I have a honey weizen in the primary right now and I'm not too concerned about it, since the off-flavors from the high temps actually accentuate the beer (IMO). But I'd like to do something other than weizens.
