I going to brew my Oktoberfest kit and with WLP029 (GER/ALE Kolsch)
can I go with a low Fermentation temp? if so how low ? Plus can i cold crash
this to have a cleaner beer ?

Optimum Fermentation Temperature: 65-69°F
Does not ferment well less than 62°F, unless during active fermentation
White Labs - WLP029

I'm fermenting a beer with that yeast right now and have previously fermented it in the mid 60s with great results. I've used Wyeast 2565 at a much lower temp with great results as well.

I am doing an oktoberfest ale next week with WPL029 and plan to fermet at 65deg.

it worked really well last year.

i've fermented the kolsch at 62 before and it came out wonderful. i'll be trying the german ale yeast on an "oktoberfest" soon also and I plan to take it as low as possible to try and mimic a lager. i'd like to try and keep it below 64, but we'll see how the week goes.

edit: i'm referring to the wyeast strains kolsch (2565) & german ale (1007)
