Help! What to do with plants and weeds after harvest

We just finished our pilot 1/2 acre and had our first harvest. There are different methods for what to do after harvesting and we want to know what is the best.

Dormancy:
Do we cut back all of the bines and then bury them? If we cut them, how far back do we cut? How many of the bines do we cut, some have as many as 20+. Some references say to not cut any the first year. Do we just let them harden off and then bury them? When is the right time to do prepare them for dormancy?

Weeds:
What should we do about the weeds growing during the dormant months. Can we disc them or would this damage the hops? Should we spray them with herbicides or would this hurt/affect the plants?

We would really appreciate any advice or detailed how-to's. Thanks in advanced! :mug:

FWIW...I've been growing 8 plants for several years now. At harvest, I cut the bines to about 18" and let the new shoots grow until the first hard frost. Then cut everything back to ground level and mulch about 4" deep. Works so far.
