I just kegged Biermunchers Kona Fire Rock P.A. and realized I should have let it ferment a few more days because my F.G. was 1.019 and should have been 1.014. My O.G. was 1.055 the recipe O.G. is 1.053. I learned I should check my gravity before I cold crash, instead of just giving it 2 weeks and hoping it is fermented to completion. My question is how will this effect the taste? Is this a major problem or a minor one? Thanks

I think you'll be fine. It will be a bit less alcohol, and a bit more body, but that's not a horrible place to be. You are around 4.7% alcohol and 64% attenuation so that's not terrible. I have the same problem of not checking the gravity before moving on.
