I've used em before. It was obviously found by some idiot in the health inspector's office who has never worked in a kitchen before.

They would be very hard to sanitize. They scratch very easily.
 
i just threw two of those away, i got them in a cl buy and had no idea what to do with it
 
Get a plate chiller. In the winter we use tap water and can pump full bore to 66 degrees after a 15 minute rest after whirlpooling at end of boil. In the summer we use iced water and an immersion pump. Just make sure you back flush to clean.
