I made a starter on my stir plate two days ago. (White Labs,Vermont Ale) Now I can not brew until next week at the earliest. The flask has a foam insert on the top so I thought I would cover the foam with plastic wrap. Maybe a rubber band as well on the neck. Into the fridge. Good enough?
 
I think you'll be fine. Just let it warm up to temperature before pitching. I've left completed starters in my fridge for about a week on a number of occasions without anything bad happening.

If you're worried you could always build another started from the yeast in this starter a couple days before brew day.
