My weizen beer w/ wyeast 3068 started out at fermenting around 72 degrees or so. It has since climbed to somewhere between 75 and 77 considering that the upstairs of my house is much warmer than downstairs. It has been fermenting vigorously for almost 24 hours.
I've since moved it downstairs, hoping to drop it back down to around 72-ish.
Three quick questions:
1. Did I already mess it up letting the temp of it get that high?
2. Will dropping the temp down to 70ish affect the beer, given the drastic change in temps?
3. I have it in a fermentation bucket downstairs but there is no good, dark space. Since it's not a transparent glass carboy, is it okay to leave it an unlit place?
