So I brewed a honey kolsch extract kit last Friday. Fermentation took off like a rocket 12 hours after pitching and then slowed down to about 5 bubbles a minute by day 5. Today I get home and I have beer in the airlock! Had to put the blowoff tube in. Has anyone had yeast just take off like that so late, or has something else taken over?
 
that's not all that uncommon if you pitch good, healthy yeast. nothing else ferments that vigorously (as far as I know), so you can be assured it was the kolsch yeast.

edit: sorry, didn't see that this took off after 5 days. i still don't think it was anything besides the yeast.
