I have a Wyeast smack pack of European Ale that was smacked a little over 3 weeks ago. Is there any reason that the yeast wouldn't be viable anymore? I will be making a starter w/ aeration and stirplate.
I've got a pack from July of dennys fav 50. PUBS discounted for being old. Will this still be good?
You are likely going to be fine. There was an article a while back where some crazy scientist rehydrated some 3000 year old yeast from an ancient dehydrated beer and stepped it up enough to brew a batch.
