How long after putting the wort and yeast into the carboy should I begin to see some action?

It's been 4 hours and I see nothing. I proofed the yeast and it seemed OK, not super active, but OK.

Is there a minimum time before you start seeing some bubbling and foam?

Also, my instructions say leave the cap off the fermentation lock, why? It has small holes in it??

I've never heard that...put the cap on.

Could be anywhere up to 48 hours...this is where you relax and have a brew. :)
 
The yeast multiple as long as there is O2, this is good. It uses up the O2 and makes for more yeast. Once the O2 is gone, the bubbling starts. 48 hours is the max, 24 is typical.

In a strong ferment, you can end up with wort/cider spraying all over the place or even blowing the lock out of the fermenter.
