I'm wanting to use Safbrew t-58 to ferment Dois Esquis clone. The recipe calls for SafLager 23. Will this work and what are the consequences?
 
T-58 is a has Belgium yeast characteristics from ester production such as banana, bubble gum or glove. I have a Belgium Wit on tap right now I fermented with T-58 and I pick up banana, my neighbor picks up bubble gum. It's good but not for a Dos Equis clone. Dos Equis is a Lager. It should have little ester production at all, and definitely not banana or bubble gum.
 
That would be weird for such a lighter style ale. I thought t-58 was a pretty mild belgiany yeast in what i brewed,i did a saison,and hefe,i got pretty mild esters maybe a little spice but definatly a mild belgian taste.I didnt get much bananna or bubblegum,*glove*ha, or much clove.
