I'm about 2/3 of the way through primary fermentation for an amber ale extract kit with steeping grains. I have the 7 gallon fermenter (5 gallons of wort) in a cold water bath draped with wet shirt etc., and have been keeping the temperature of the water bath between 64 and 67 degrees.
When I siphon to the better bottle for secondary fermentation, would it be okay to just let the better bottle sit at room temperature: 71-74 degrees F ? Or should I really use the water bath routine for the secondary also?
