So I know it's a little while off, since this batch is only a few days old, but how do you know when it's ready to move to the secondary? Is there a set time to let it go in the primary, or is it based on SG staying constant for a few days, or what? Thanks, and everyone have a great rest of their day.

I just rough it and call it ~1 month. Then I rack every 6-8 weeks after until it's clear. At that point, if I like the taste - I bottle and drink even though I should probably age it longer.

Hopefully once I get my pipeline filled up enough I won't have to worry about that and can start aging longer.

how important is it to rack after one month, being as I'm in a position where I started a buckwheat honey mead and I won't be able to see it again for 6 months?
