So I have been very neglectful and have completely forgotten about my brewing Kombucha! It has been brewing for a little over a month now and a huge, thick SCOBY has grown on top of my baby SCOBY. It doesn't appear to be moldy, can I still use it? Need help, I don't want to waste it! Thank you so much for your time!

Looks like you have several layers of scoby growth there. Peel one off and throw it in a new batch. I would not use that entire thick stack for brewing though. Also, depending on how strong and vinegar-tasting that tea is, you might want to just use it for starter tea rather than drinking.
 
Dilute by half with fresh sweet tea. Drink it and brew a new batch.
