So I finally got around to making the 11-11-11 old ale, last weekend.

I know, I know, it was way too late, but life kept getting in the way.

I had a packet of the Wyeast 9097-PC dated 11/10/10, and I was suspicious about its viability, but I pitched it anyways.

Well it's been a week, and there is no activity. None.

I'm guessing the yeast was all dead.

My question: can I pitch another yeast so late in the game?

And, if I can, which yeast should I use? I know the 9097 had brett in it. My LHBS carries the whole White Labs line, so I can pick it up today.

Help!

EDIT: Everything is ok! It started this morning! Thanks for looking.

Oh boy, did you not make a starter? I would assume that some of the Brett is still active and will eventually make an appearance in the beer, though the primary yeast probably is not viable enough to show full signs of fermentation. Since it's been a week, I'd pitch another strain. A neutral american or british strain would work well with the brett. Good luck!
