Recipe Ideas? Sterling Hops

I have six ounces of Sterling Hops, and London ESB, Irish Ale, and Thames Valley as yeasts. I have a pretty good selection of specialty grains and base malts (MO, Golden Promise, Belgian Pils, US 2-Row).

Any ideas?
 
Here's what I have in mind so far.

8 lbs Pils
2 lbs Munich
2 lbs Vienna
1 lb Crystal

1 oz Sterling (60min)
1/2 oz Sterling (10 min)
1/2 oz Sterling (2 min)

Thames Valley Yeast
Mash at 152

I'm debating whether to use the London ESB instead of the Thames, but worried it may be too sweet given the rest of the recipe.
