I brewed my first wild ale back in 2013 using extract and specialty grains. I have been testing it every 4-6 months or so and the beer is constantly changing (for the better!)
I'm having one tonight, 27 months since I brewed it - have a look:
Essentially it is the same recipe found on page 213 of Brewing Classic Styles but I used WLP530 in my primary instead of WLP510. After primary fermentation I used WLP650 (Brett B.) in the secondary for six months before bottling. I ended up with an FG of 1.004 at ~7.0% ABV.
Now that I have my eBIAB setup built I will be trying this again using the all-grain recipe. Cheers
