I added some honey to my brown ale in the primary 72 hours after fermentation had started and the beer went crazy. I have an overflow set up so it wasn't a big deal however I was concerned that all the honey might have just left the beer. When do you normally add honey or candi syrup?

You should be fine. It was just some blow off. I doubt that you lost any honey.

I do a lot of Belgians and often add the sugar addition 3-4 days into fermentation. It lets the yeast eat the more complex sugars first and then they get the desert of the more simple sugars to eat after a few days.

Thanks!!! Do you prefer 3 or 4 days? I am planning on doing another Belgian this weekend with Dark Candi Syrup. Also do you ever dry hop in a secondary?
