I am making JAOM, but I am not keen on using the bread yeast. I have several wine yeast laying around, one being Lalvin K1-V116. It has an 12-14% range for alcohol. I am aiming for a semi-sweet mead. You think this yeast will be ok? Better than the bread yeast?
Thanks

I've made it with Wyeast Sweet Mead Yeast and it turned out great, a lot of people have problems with this yeast but I love it as long as you aerate well. I have a batch going right now with Lalvin 71B-1122 and it's coming along nicely but it will definitely be drier.
