I have an IPA in primary, and I would like to bottle today. Its been in for 16 days. OG was 1.078, and I don't know what the gravity is now. I don;t have beersmith yet, so I dont know what FG I should be shooting for. Any suggestions?

Depends on the recipe and yeast, but I would expect in the 1.015 range (maybe a little lower). 16 days is a pretty short time, though. I wouldn't bottle yet.

Yes, the general rule of thumb is to take a gravity, wait 3-4 days, and take another. If they are the same (and close to target FG), its probably safe to bottle. If it moves at all, repeat the process.

While it may be safe to bottle, it's not generally good to bottle much before 3 weeks IMO (4 is better). Especially an 8% beer, it will just take longer to bottle condition and lose the green taste if you bottle too soon.
