Brewing a clone for Liberty ale and it has fermented for one week. The gravity went for 1.054 to 1.012. The thing is it taste a little bitter when we sampled it after fermentation. Also it is still really cloudy. I'm afraid we might have used too high of temp to mash with. Athough we started out at 170 and added water to decrease to 150s it took about 10 to 15 min. Strike water was too hot. Will this extact tannins. Also our water is pretty hard, we have well water and it leaves a lot of hard water deposits on our plumbing. Would this have anything to do with it. I know we should check ph when mashing but haven't gotten any ph strips. By the way we left in the primary and it is slowly bubbling more out of airlock.
 
Also there wasn't as much krausen as we've seen in the last few batches.
