hey I was thinking about this too. My dad's house has an outdoor brick chimney firepit I was thinking about building a fire and boiling wort on. Suppose it would impart some smokiness. And be cheap as hell to boil on.
I brew over an open wood fire often, google coal porter too, but fire will be in your beer, no way to avoid this . OK for certain styles, but not everything . Try it, it's fun.
Thats one of the things i was wondering about.
so i put my kettle on there full of water. and
the weber didnt seem to mind. but the cooking
grate is questionable. but i do have a weber fire
chimney that i use to start the charcoal before
bbqing. gets really hot using only a little bit of
charcoal. i was thinking of building a small box
out of cinder blocks putting that inside and the
kettle on top. also this way i can pull it out and
put more charcoal in there if needed.
this is the fire chimney not sure how to load pictures
