What would the result be if I mixed HME with unheated water and let it ferment? Drinkable?
No heat brewing...

Why would it get infected? If bottled water is used, and Starsan on everything, i can't see that being an issue. Terrible taste? Possibly,but why?

If the water was sterile and the HME mixed well then it would turn into beer. The HME has already been brewed. The only issue I can see is mixing the HME in cooler water.
There's only one way to answer this question. You know what you have to do.
