Suggestions for Summer All-Grain brew

Ok, so i'm looking for a very good lighter venue summer brew. i've been leaning toward something in the rye family or maybe a dunkelweisen, but am very much open to suggestions. I really don't want it super hoppy or malty brew, but something light on a hot (Houston) summer day..... thought?
 
KOLSCH all the way. it was my 2nd all grain ever, i bought it from Northern Brewer and it had a great, light, clean, crisp flavor. The longer it sat the better it got. My suggestion is buy it now, brew it next week and let it condition until summer. i just drank my last bottle last week from a batch i made last summer. it was as clean and clear as an american lager. i've also made thier RYE pa partial mash - good beer but a little heavier than what you are likely looking for/

great suggestion... i'd never even thought of a Kolsch! definitely in the running and thanks for your feedback!
 
Ryes can be great. American wheat. Belgian wit with zested orange is a ton of fun (use a liquid belgian wit yeast). Cream ale keeps the BMC crowd happy.

An alt is terrific, and a california common (anchor steam) is a very refreshing drink as well (use northern brewer hops or don't even bother).
 
BM's centennial blonde, easy cheap, definately refreshing, great for a bbq, great when working in the yard, a big time crowd pleaser for sure, hands down bm's centennial blonde, not a bad one to have on tap year round actually...

May I recommend a lower gravity Saison? Very cheap, easy, and refreshing. Make sure to use 3711 (French Saison) as it is not as finicky as 3724 (doesn't need to be pushed to 90F).
 
I just brewed your standard Weizenbier for the summer. Pretty crisp and refreshing...
 
Summer brewing to me means hefes, wits, belgians and alts. Most are light, tasty and fairly easy to brew.
 
Dead Guy Ale Clone: for 6 gallons
O.G. 1.065-15.9*plato
F.G. 1.014-3.6*plato
6.7% ABV
49.4 IBU
Color 7.5*L
10.58 Lbs.Two row
3.57 Lbs.Munich
1.53 Lbs Carastan
-Hops in Pellets-
1.41 oz. Perlehops(boil)90 minutes-7.5% AA
1.13 oz Sterlinghops(aroma)1 minutes-7% AA
60 minute single infusion mash at 152*f.Mash-out at 168*f.90 minute boil.
Wyeast 1764 Rogue Pac-man yeast.Wyeast yeast nutrient.Aerate well.Ferment
at 60*f for 2 weeks
 
Well, i think i've made up my mind... i think I have to do 2: a kolsch and a cream... oh heck I think i'll throw in a dunkelweisse also... so many choices so little time!
