Got a quick question. What type of cheese would rochefort 10 pair well with? I was thinking of going with a applewood smoked chedder. Also, what type of cured meat pairs well with it? What meat and cheese pairs well with pilsner urquell? And what cured meat and cheese pairs well with brooklyn lager?

+1, I'd start there too. If you're planning a pairing party for some friends, I'd just go buy some small samples of several different varieties and try them out with a few different beers.

I posted this the other day and it might help a little bit...except that they were all beers from Epic Brewing. My fav was definitely a Saison paired with Stilton cheese.
