I've got a cream ale sitting in the keg right now and it's been there for about a month. I let it rest for 2 weeks and then carbed at 30 psi for 3 or 4 days and since then it's been overcarbed and foamy.

How do I knock that carbonation down? Can I just take it off the gas for a week to let it settle?

Thanks

take it off gas and release pressure, keep doing this every few hours (maybe every 12 should be fine) until carbonation is acceptable, re-gas at correct pressure and enjoy

This is what I did when I overcarbed my ESB. I cut the gas to the keg and bled off the keg every hour for a few hours until it was noticeably less pressurized in the keg. Set the pressure to the keg at around 5 and let it stabalize... readjusted up to close to 10 and it is pouring great.

Good luck.
