Sorry for what I'm sure should be a basic question, but here goes.

When using a secondary, do you simply rack into the second carboy, or do you add more yeast? And if you don't add anything, how does the fermentation get started again? Is it simply from the introduction of more oxygen from the transfer?

Unless you're adding more fermentables (like fruit), there is generally no fermentation in the secondary. It's main purpose is to clear the beer. Many people here don't use a secondary at all.

When racking to secondary, you DON'T want to introduce oxygen, as you risk off flavors from oxidation.
