follow up siphoning question: bubbles

Thanks to everyone for replying to my siphoning question and it sounds like I will add an autosiphon to my next order.

As a follow-on question, what's the big deal about not getting any bubbles in the mix? I know my book said that too but didn't explain. I'm having trouble imagining the effect this could have. Wouldn't they just settle out after a few minutes?
 
Well, bubbles are made of air and you definitely don't want to aerate your beer. It'll oxidize, making it taste like wet cardboard or sherry-wine like. That's why you don't stir or splash once fermentation has begun.
