I'm just about to sample two single malt beers. Obviously both pale ales.

The first one Batemans Spring is simply Maris Otter with Pheonix and Target hops at 5% abv
It's a refreshing brew with clean tastes but lacks the complexity and body I like. I does have a good after taste but not much taste when quaffed. It's not going on my favourites list but I will drink it again if available.

Marston's Single Malt

Brewed using Golden Promise malt. Grown in the north, it is one of the oldest varieties of brewing barley and one that has also been popular with whisky distillers. This full flavoured Malt combines with our fine English hops to produce a smooth, mellow beer with a flavour that is subtly different from any other, but as distinctive as a single malt whisky.

But the point of this thread is to see if you have any favourite simple recipes with few recipes?

I'll bite. Here's the simplest recipe in my stable.

Pride of Raubsville

5 gallons US

Pale Malt (Maris Otter) - 6 lbs (80%)
Crystal Malt, 55L - 0.75 lbs (10%)
Demerara Sugar - 0.75 lbs (10%)

Target - 10% - 1 oz (FWH)
Goldings - 0.5 oz (flameout)
Goldings - 1 oz (dry hop)

OG 1045 IBU 40

Yeast: Wyeast 1187 (Ringwood)

Pretty simple, eh?

Here is a smash version of the simple minded ale I make:

5lbs 2 row
.75 oz Fuggles (or Challenger,EKG)
.25 oz Fuggles (or Challenger,EKG)
Safale 04 or Nottingham

og~ 1.044 to 1.053
fg~ 1.006 to 1.010
This is for a 2.5 gal batch. YUM!

0.75 oz Tettnang [4.20 %] (60 min) Hops 11.8 IBU
0.75 oz Tettnang [4.20 %] (60 min) (First Wort HoHops 12.9 IBU
0.75 oz Tettnang [4.20 %] (30 min) Hops 6.0 IBU
0.75 oz Tettnang [4.20 %] (5 min) Hops 2.0 IBU

1 Pkgs Safale #US - 05 (DCL Yeast #US - 05) Yeast-Ale

.5 oz cascade 30

came out to about 3.4 which is probably the reason it disappeared so quickly. Going to make a batch today with challenger for the whole hop bill.

I got this simple recipe from my local brewshop.

"Wonderful Wichita Wheat"

7lbs Wheat LME
1/2 oz Perle :60m
1/2 oz Saaz :05
WLP300 Hefeweizen Ale Yeast

I will brew it this Sunday, but I had a question. Will adding 2oz Centennial Hops at around 30min or later have some odd effects? I would like a Hefe but I am sort of a Hophead, so I am just curious.
 
German Pilsner malt + [Choose] German Noble Hop(s) = Helles:)

...Maybe not so simple in the brewing/fermenting.

two very simple (and easy) recipes and two of my finest beers ever:

10 lbs Vienna Malt (mash at 152°F)
1 oz Northern Brewer 8.0% 60 min
1 oz Northern Brewer 8.0% 20 min
1 oz Northern Brewer 8.0% 5 min
Nottingham Yeast

6 lbs Wheat Malt
4 lbs Vienna Malt (mash at 152°F)
1 oz Hallertau, Saaz or Tettnanger to 10 IBUs
WLP300

for 5.5 gal. batch.

If I brew it again, I'll throw in another ounce at flameout.
 
For a Hefeweizen I would just go with 1oz low AA level hops at a 60min boil. No other Hop additions needed. If you want aroma, I would go with 1/2oz of a noble hop at the last 5min boil.

Here is a simple recipe that works pretty well.

Quicky Hefe...
6lb Bavarian LME
1oz Liberty at 60min
Wyeast Hefe strain
3 weeks ready to drink
