I have a suspicion my fridge is set to low and my yeast may have been frozen. If this doesn't take off in 72 hours can I just pitch a pack of Notty I've had in the fridge for six months and can't figure out what to do with? This is for a high gravity Holiday beer based on English Old Ale. I plan to sample some this year and age some for the next two.
 
Sure, an English Old Ale is complex enough. Just be careful to keep the fermentation temperature down around 60-62F at the start.
